What kind of paperwork is involved in maintaining an LLC vs a non-proft?

I'm thinking about developing a small organization that offers training to educators online. I'm leaning towards non-profit so that I can pursue grant funding and expand the project further, but am concerned about the paperwork and costs involved. Which is simplest and most manageable? Do you pay taxes on all income received or only the profit leftover after salaries have been paid. Any feedback is of great help.

I wouldn't rule out a for-profit company. It takes a very long time to become a non-profit. And, for-profit companies also qualify for grants. I've worked for and consulted for both types of companies (for profit and non-profit). The big advantage of a non-profit is that individuals and private foundations that give you grants can sometimes write this as as a donation.
